Marinated Collard Greens (Raw Vegan)

 

1 bunch collards

1 large yellow onion

1 pkg mushrooms

1/2 cup nama shoyu (or tamari or soy sauce- not raw)

1/2 cup olive oil

1/2 cup apple cider vinegar

 

  1. Slice mushrroms thinly and slice onion into thin rings.

  2. Whisk together nama shoyu, olive oil and vinegar into large mixing bowl.

  3. Add mushrooms and onions to nama shoyu mix.

  4. Cut or tear collards into bite size pieces and add to nama shoyu mix.

  5. Marinate for 3 hours, gently mixing every 30 minutes or so

  6. Drain and serve.
